Fresh cod and haddock are served up in abundance in County Cork, where it is one of the most popular dishes. But there is another type of fish that is just as good – and even better – when cooked over charcoal. Kinsale is famous for its smoked salmon, but what about its fishy fishy? In fact, many people think that it tastes like nothing else on earth. The reason why this particular style of cooking works so well is because the fish is left out overnight in the open air. During the night, the smoke penetrates into the flesh of the fish, giving it a unique flavour. This method of smoking fish is called 'barbecue' or 'grilling'. And it is a technique used throughout the world. But in Ireland, it is particularly associated with the west coast town of Kinsale. There are several restaurants serving grilled fish in Kinsale, including the renowned Fishy Fishy restaurant, which is run by chef John Devane. He says that he uses local seafood whenever possible. And his customers agree. They say that the fishy fishy is simply delicious.

A restaurant owner in Idaho says he wants to make sure his customers know exactly what they're getting into when they eat there. "We want people to come here and feel comfortable," says Chris Anderson, co-owner of the Idaho Bar & Grill in Boise. "So we try to offer something for everyone." Anderson says he knows some diners might prefer a burger over a steak, while others will go straight for the lobster roll. So he's built his menu around those preferences. He calls it "the Idaho way." The menu features items like chicken wings, burgers, steaks, pasta, seafood, salads, sandwiches and desserts. But there are also vegetarian options, including tofu and tempeh dishes, along with gluten-free bread and rolls. And because many of his customers don't drink alcohol, Anderson makes sure to offer beer, wine and cider. Anderson says he tries to keep prices reasonable too. Many items cost less than $10, and most meals under $20. He adds that he doesn't mind if guests bring their dogs inside. "I've had people bring their dog in and sit down next to us," he says. "That's just part of our family now." And Anderson says the restaurant isn't afraid to experiment either. Recently, he added a dessert called the "Creamy Mooch." It's a chocolate cake topped with vanilla ice cream and caramel sauce. "People love it," he says. "They say it tastes like a milkshake." But Anderson admits that being open about the menu hasn't always been easy. When he opened the restaurant six months ago, he says, he received negative feedback. Some customers thought it was weird that he didn't serve alcohol. Others complained that the prices seemed high.

How do I know if my restaurant idea is good?
You should always start off by thinking about what kind of restaurant you want to open. Do you want to have a sit-down restaurant where people eat dinner and then go home after eating? Or would you rather have a place where people stop in for lunch and then go back to work? If you don't know what kind of restaurant you'd like to have, you may want to think about opening a bakery instead. You could sell pastries, cookies, muffins, cakes, pies, bread, sandwiches, wraps, salads, soups, appetizers, entrees, desserts, drinks, juices, smoothies, milkshakes, shakes, etc.
What are some ways to save money when eating out?
If you're trying to stay under budget, here are some ideas: Order appetizer portions instead of entrée portions. Ask for half orders of side dishes. Skip dessert. Try going to fast food chains instead of sit down restaurants.
Why would someone want to eat out instead of cooking at home?
If you enjoy eating out, then you probably don't cook much at home. Eating out is fun and relaxing. You get to meet new people and try different foods. Plus, it's cheaper than buying groceries!
